- WHAT IS SUREKHA RICE? Surekha (pronounced sir-RAY-ka) is nutritionally closer to brown rice than white rice because of the ancient processing technique of 'parboiling'. After being harvested, the grains get steamed in their husks (not done to conventional rice's) to lock in nutrients and fiber. The process also hardens the grains, so they stay firm and separate.
