The tender stems, buds, and flowers have a delicate yet slightly bitter flavor which can be enjoyed steamed, in stir-fry, or in salads. It is known for its high nutritional content. For optimal flavor budding shoots should be harvested just before flowers open. Raab is a staple in Italian and Chinese Cuisine, and recently has become popular in the United States.
