Often called “New Mexico Cave Beans,” these half-inch beans are known for their striking burgundy and cream speckled pattern, which softens to a pale pink color when cooked. Their mild flavor and firm texture make them exceptionally versatile across a wide range of savory preparations. Anasazi beans perform beautifully in Southwestern cuisine, including chili, stews, casseroles, and hearty soups.
